Fruit and Nut Chocolate Bites
Fruit and nuts chocolate bites - these really do what they say on the tin. Add your favourite dried fruits and nuts to your favourite vegan chocolate and you've suddenly created a customised bar.
I love having one of these with an afternoon tea or as dessert in the evenings. Don't underestimate the ability to impress your dinner guests with a beautifully set out dessert board of homemade chocolate and cut up fruit. Don't miss out the rice krispies in this, it gives the chocolate a fun crunch and texture!

Ingredients:
- 200g chocolate, chopped
- 2 tbsp coconut oil
- 80g cashews, roughly chopped
- 50g dried apricots
- 50g raisins
- 20g rice krispies
Method:

Line a tray with baking paper and set aside.

Place the chocolate into a heat-proof bowl and add the coconut oil. Place the bowl over a pan of simmering water and melt, stirring occasionally.

In a separate bowl, add the cashews, apricots, raisins and rice krispies.

Pour the melted chocolate on top and stir until combined.

Pour into a lined tray and shake distribute evenly. Press down with a spatula if needed.

Allow to set in the fridge for a couple of hours.

Once set, slice into squares (see tip) and keep stored in the fridge.
