Peanut Butter Miso Brownies

This recipe is not for the faint hearted.

Decadent, fudge-y AF with swirls of peanut butter, this really is how brownies should be made.

Some people like their brownies on the cake-y side. If that’s you, please stop reading. These are dense and moist and mouth-wateringly delicious without a dry crumb in sight.

The flavours truly are match made in heaven. The miso provides a salted caramelised flavour and the peanut butter adds, well, peanut butter. Whoever said no to peanut butter, salted caramel and chocolate? No one, ever.

Ingredients (makes 20 brownies):

Batter mix:

  • 5 tbsp milled chia seeds

  • 150g coconut oil

  • 250g dark chocolate, broken into small pieces

  • 100g peanut butter

  • 300g brown sugar

  • 120g plain flour

  • 3 tbsp miso paste

  • 1/2 tsp salt

Peanut butter swirl:

  • 1 tbsp vanilla essence

  • 60g peanut butter

  • 1 tbsp coconut oil

Method:

  1. Preheat the oven to 180c fan / 200c. Line a square tin with baking paper.

  2. In a small bowl, mix the milled chia seeds with 1 cup of water and leave to sit.

  3. Using a saucepan over a low heat, melt the coconut oil, dark chocolate and peanut butter together. Take off the heat once melted.

  4. Mix in the sugar, flour, miso and salt. Then mix in the chia seed mixture.

  5. Pour into the lined tin and gently tap the tin on the table to distribute the batter.

  6. Make the peanut butter swirl: In a medium bowl, stir together the peanut butter, melted coconut oil, and vanilla essence.

  7. Drop spoonfuls of the peanut butter mixture on top of the brownies, then swirl it with a knife.

  8. Place the brownies in the oven for 45 minutes. They will be quite wobbly in the middle when you remove the brownies but let them cool completely and they will become heavenly gooey.

  9. Cut into 20 squares once completely cool (if you can wait!)
