Berry Cheesecake Smoothie Bowl 🍌🍒

Breakfast. Lunch. Snack. Dessert. You name a time, we’ll name a smoothie bowl.

This Berry Cheesecake Smoothie Bowl is a winner. The mix of berries and banana is a classic one, but we can’t get enough. The frozen banana adds creaminess and the lemon and berries add a zing and sweetness that come together to make this the dream bowl. 🍌🍓

Add your favourite nut butter and you’ve got yourself a party.

We get excited just typing about it.

You’ll feel like you’re eating ice cream, when in fact you’re having a delicious and nutritious bowl of plant-based whole-foods. Healthy fats, high in protein (add in that protein powder!) and full of antioxidants. It’s pretty much the adult version of hiding veggies in tomato sauce.

Ingredients (serves 1):

  • 1.5 frozen bananas 

  • 1/3 cup frozen berries

  • 1 tbsp of Nut Blend Indulgent Nut Butter

  • 1 tbsp of coconut yoghurt (or other non-dairy yoghurt)

  • The juice and zest of half a lemon (around 2 tbsp of each)

  • A pinch of cinnamon 

  • A pinch of sea salt 

  • 1/2-1 cup coconut water or dairy-free milk of your choice

Optional toppings:

  • Protein powder (the Pulsin immunity red berry is delicious here!)

  • Maple syrup

For the salted nut crunch topping:

  • 2 tbsp of mixed nuts, roughly chopped (walnuts and pistachios work well but use what you have)

  • A pinch of sea salt

Method:

  1. First, prepare your toppings. Roughly chop your nuts and mix through a pinch of sea salt.

  2. Add all smoothie ingredients to a food processor or high-speed blender. I find that food processors work really well for smoothie bowls to achieve that creamy, almost fluffy "ice cream" texture. Add liquid gradually, start with half a cup and add more as you blend - the less you add, the thicker and creamier your smoothie bowl will be.

  3. When a smooth consistency has formed (with no lumps of frozen banana!!), it's time to taste test! Add more lemon juice/zest if needed.

  4. Transfer to a bowl and add your salted nut crunch topping.

  5. Add any additional toppings such as extra coconut yoghurt and fresh fruit.

  6. Enjoy (you'll definitely need a spoon for this one!)
